Chicken Fajita Recipe

Fajita Mix (Marinade)

1 tablespoon cornstarch
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon ground paprika
1 teaspoon white sugar
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon ground cumin
¼ teaspoon cayenne pepper
2 garlic cloves, crushed
4 tbsp olive oil
1 lime, juiced
Tabasco

Main Ingredients

2 chicken breasts, finely sliced
1 red onion, finely sliced
1 red pepper, sliced
1 red chilli, finely sliced (optional)

To Serve

8 Tortillas
Mixed salad
230g salsa

Instructions

  1. Gather all dry ingredients of fajita mix into a small bowl and mix together. Then add the wet ingredients.
  2. Slice peppers and onion and then finely chop chicken breasts – add to the marinade.
  3. Keep everything moving over a high heat for about 5 mins using tongs until you get a nice charred effect. If your griddle pan is small you may need to do this in two batches.
  4. To check the chicken is cooked, find the thickest part and tear in half – if any part is still raw cook until done.
  5. Put the tortillas in the oven to heat up and serve with the cooked chicken, a bag of mixed salad and one 230g tub of fresh salsa.
