{"id":2323,"date":"2014-11-06T23:52:00","date_gmt":"2014-11-06T23:52:00","guid":{"rendered":"https:\/\/www.jameshatton.co.uk\/blog\/?p=2323"},"modified":"2024-01-11T00:14:33","modified_gmt":"2024-01-11T00:14:33","slug":"pasta-all-carbonara","status":"publish","type":"post","link":"https:\/\/www.jameshatton.co.uk\/blog\/2014\/11\/06\/pasta-all-carbonara\/","title":{"rendered":"Pasta alla carbonara"},"content":{"rendered":"\n<p>Delia&#8217;s version of the great classic Italian recipe for pasta with bacon and egg sauce. \u00a0<\/p>\n\n\n\n<p>credit: <a href=\"https:\/\/www.deliaonline.com\/recipes\/collections\/recipes-for-2\/pasta-alla-carbonara\">deliaonline.com\/recipes\/collections\/recipes-for-2\/pasta-alla-carbonara<\/a><\/p>\n\n\n\n<!--more-->\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>225g dried linguini or spaghetti (good quality pasta, look for the words \u2018pasta di semola di grano duro\u2019 on the packet)<\/li>\n\n\n\n<li>150g sliced smoked pancetta<\/li>\n\n\n\n<li>2 large eggs, plus 2 extra yolks<\/li>\n\n\n\n<li>4 tablespoons Pecorino Romano, finely grated, plus extra to serve<\/li>\n\n\n\n<li>4 tablespoons double cream<\/li>\n\n\n\n<li>freshly milled black pepper<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Method<\/h2>\n\n\n\n<p>First heat some pasta bowls ready for serving.<\/p>\n\n\n\n<p>Then in a large saucepan heat 2.25 litres of salted water and bring it up to a good fierce boil, then add the pasta and boil briskly, uncovered for 9-10 minutes until al dente. Meanwhile, heat a frying pan and fry the pancetta without any extra oil until it\u2019s crisp and golden, about 5 minutes.<\/p>\n\n\n\n<p>Next, whisk the eggs, yolks and cream in a jug with a generous seasoning of black pepper then whisk in the cheese. When the pasta is cooked, drain it quickly in a colander, leaving a little of the moisture still clinging. \u2028\u2028Now quickly return it to the saucepan and add the pancetta and any oil in the pan, along with the egg and cream mixture.<\/p>\n\n\n\n<p>Stir very thoroughly, so that everything gets a good coating \u2013 what happens is that the liquid egg cooks briefly as it comes into contact with the hot pasta.
