Made in a slow cooker, it\u2019s a great batch-cook for the freezer.<\/p>\n\n\n\n<p>credit: <a href=\"https:\/\/www.bbcgoodfood.com\/recipes\/sausage-cassoulet\" target=\"_blank\" rel=\"noreferrer noopener\">bbcgoodfood.com\/recipes\/sausage-cassoulet<\/a><\/p>\n\n\n\n<!--more-->\n\n\n\n<p>Ingredients<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 tbsp vegetable oil<\/li>\n\n\n\n<li>12 Toulouse-style sausages<\/li>\n\n\n\n<li>200g bacon lardons<\/li>\n\n\n\n<li>2 onions, finely chopped<\/li>\n\n\n\n<li>2 celery sticks, finely chopped<\/li>\n\n\n\n<li>2 garlic cloves, crushed<\/li>\n\n\n\n<li>1 tbsp smoked paprika<\/li>\n\n\n\n<li>\u00bd bunch of thyme, leaves picked and roughly chopped<\/li>\n\n\n\n<li>200ml white wine<\/li>\n\n\n\n<li>400g can chopped tomatoes<\/li>\n\n\n\n<li>200ml chicken or veg stock (fresh or 1\/2 a stock cube crumbled in 200ml water)<\/li>\n\n\n\n<li>400g can butter beans, drained and rinsed<\/li>\n\n\n\n<li>400g can haricot beans, drained and rinsed<\/li>\n\n\n\n<li>1 tbsp caster sugar<\/li>\n\n\n\n<li>1 tbsp red wine vinegar<\/li>\n\n\n\n<li>crusty bread, to serve (optional)<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Method<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Set the\u00a0slow cooker\u00a0to low (ours had a 5-litre capacity).<\/li>\n\n\n\n<li>Heat the oil in a large\u00a0frying pan\u00a0over a high heat and brown the sausages on each side \u2013 you don\u2019t have to cook them all the way through. Set aside on a plate.<\/li>\n\n\n\n<li>Put the lardons, onion and celery in the pan and cook over a medium heat for 8-10 mins until the onion is translucent and the lardons crisp. Stir in the garlic, paprika and thyme, and fry for 3 mins.<\/li>\n\n\n\n<li>Pour in the wine and simmer until reduced by half, around 5-10 mins.<\/li>\n\n\n\n<li>Tip in the chopped tomatoes, stock, both lots of beans, the sugar and vinegar. Stir until combined and bring to the boil. Pour into the slow cooker with the sausages.<\/li>\n\n\n\n<li>Cover and cook for 6-8 hrs.
